The Pineapple Juice and Puree Processing Line is a specialized industrial system designed to extract high-quality juice, concentrate, and puree from fresh pineapples. Pineapple presents several unique challenges for juice and puree production. The hard outer skin and fibrous core require robust trimming and coring equipment. More importantly, pineapple contains bromelain, a proteolytic enzyme that can break down protein-based thickeners, cause gelation, and lead to flavor changes if not properly deactivated. Our line includes a dedicated enzyme deactivation unit that rapidly raises the temperature of the crushed pineapple to 85 degrees Celsius within seconds, permanently inactivating bromelain while preserving natural color and flavor.
The extraction system uses a two-stage approach. First, a pineapple trimming and coring machine removes the outer skin and hard central core, directing the edible flesh to the next stage. Second, a finisher or pulper separates the juice and fine pulp from coarse fibers. For customers requiring puree with visible fiber, we can adjust screen sizes to retain some texture. For clear juice production, a centrifuge and ultrafiltration system remove all suspended solids.
Our line offers flexibility in final product forms. You can produce single-strength pineapple juice, concentrated juice through a multi-effect evaporator, or fibrous puree for smoothies and bakery applications. The aseptic bag filling system allows any of these products to be stored at ambient temperature for 12 to 24 months, significantly reducing cold storage requirements for tropical fruit products.
All product-contact parts are constructed from stainless steel 316, which resists the corrosive effects of pineapple's acidic juice. The line is designed for easy cleaning between batches, with CIP nozzles installed at all critical points.
Processing Stages
Fresh pineapples are first washed in a brush washer that removes dirt and surface contaminants. Workers manually trim the crown and base of each pineapple before the fruit enters the automatic trimming and coring machine. This machine removes the outer skin and extracts the hard central core, producing pineapple rings or chunks of clean flesh.
The clean pineapple flesh passes through a crusher or hammer mill that breaks it into small pieces. The crushed pineapple then enters an enzyme deactivation unit where steam injection or a heat exchanger rapidly raises the temperature to inactivate bromelain. The heated pineapple mass is then pumped into a finisher where a rotating screw presses the juice and fine pulp through a screen while coarse fibers are discharged.
The extracted juice or puree enters a deaerator where dissolved oxygen is removed under vacuum, preventing oxidation and color darkening. For concentrate production, the juice passes through a multi-effect evaporator that removes water under vacuum at low temperatures. The concentrated juice or puree is then sterilized using high-temperature short-time technology before entering the aseptic buffer tank. Finally, the sterile product is filled into aseptic bags ranging from 5kg to 220kg and sealed automatically.
